Recently retired, and looking for more info and recipes. Have a Weber gas grill, and a Brinkmann dome smoker( a gift from the kids). Have always grilled, but nothing notable. Looking forward to learning from the Pitmaster.

Welcome from another Dallasite.... Where abouts are you in the Metroplex? I started with a Brinkman a long time ago. Upgraded to a UDS and might bring the ECB (El Cheapo Brinkman) out of retirement to be used as a cold smoker....
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.
