Check out "Mad Scientist BBQ" on YouTube. His video called "The ultimate guide to fire management/ how to manage your smoker fire." It describes how large your splits need to be at the 7:23 minute mark. Jeremy Yoder is a scientist who loves to smoke. He has all sorts of stick burners and I think his Franklin smoker is close to the same size as your Lang.
I’ve cooked on a 36†Lang trailer smoker an it was amazing! You almost have to join a church to get enough people to eat all the meat that thing can cook at one time!
