    New member here. I have been "messing with gas" grill/vertical smoker and a little bit of charcoal in the kettle but have just purchased a BigJoe(Kamado) and look forward to gleaning the site for some expert advice.
    Question #1. Why buy steak knives when (IMHO) the "perfect" steak should only require a butter knife?

        Greetings. Once lived in both Albany and Valdosta. No better onions anywhere in the world.

        A perfect piece of brisket doesn't need a steak knife but first rate steaks don't "cut with a fork" ---- not really.
