    Kbq temp

    I am doing a practice run on a smoked turkey using meatheads recipe. I have a very hot fire using oak but the hottest I can get is a little over 300. Will I still be ok with crispy skin? I don’t understand why it won’t get hotter. Click image for larger version

      It has been a while since I used mine but I would swear I could get mine to 380+. But I do not measure temperature that way. I measure at grate level with a thermal works smoke.

        I routinely get my temp higher - to 350* or more. I use a Maverick SR50 and measure at the grate. The temperature is cooler at the top, a top mount thermometer will read lower than other parts of the smoker.

          Thanks, I did take your suggestions and when I was peeking I put in my grate probe. Temp was around 340-350.
