      9 cooks in and I am thrilled. Wish I had done this much sooner. WAY better bark and smoke than the pellet pooper, vertical propane smoker, gas smoker, ugly drum smoker and weber.

        And because it uses convection, meats cook faster. Spareribs that would take 4.5-5 hours in my traditional offset cook in 3 hrs in my KBQ. Great smoker.

          Wide open the first 2-3 hours and just the bottom open the rest of the way. Tha'ts me and it is just my reasoning and not the result of experimentation. Others will know more..
