    Where are the KBQ Users

    The KBQ area has been too quiet. With Spring arriving it is time to things started for the year. Saturday was great weather and I had the itch. Smoked a full packer brisket, pork butt, pastrami, 3 slabs of ribs, and 20 hot links. What a feast. The only issue I had this time is the poppet valves not staying in position. Besides using the heavy duty paperclip, what else has been tried to hold the valves?

    That’s quite a menu. I recently moved and haven’t been able to cook as often as I would like, but intend to cook a big brisket soon, likely for the sweet16/elite 8 games. With regards to your poppets, I’ve never encountered issues with my KBQ doing that. Are they closing on their own? Only reason I could see mine doing that is my cooker is on a slope.

    What am I missing?

      I believe the poppets are moving when I am loading new wood. Could be the vibration or for the top poppet being hit with the new wood pieces.

        I honestly never even think about them. I keep them wide open on the bottom and closed on the top. Then let it rip. I check them every once in a while during the cook, but I do not really pay much attention to them. The food is always so dang good either way.

        Great looking cook. I love the color the KBQ imparts on the brisket.

        I use my KBQ all the time. And I still love it. Even in the winter months in MN, it still rips.

          Getting ready to use my KBQ soon. Ribs will be on the menu. I use the binder clips as well. Not that I'm worried that they'll close on their own, but to ensure I don't hit a poppet inadvertently and close it.

                I love to see this! Could not be happier with my KBQ after 10 years. Never had a single issue, the thing just works. And makes amazing BBQ every time.

              Firing my KBQ up this weekend for the first time since my son was born 3 years ago. Throwing a farewell bbq for some neighbors and making sure they REALLY miss us.

                Haven’t gotten the KBQ out much lately, nor have I posted much in the Pit for the last year or so. We got busy moving across the country (Michigan to Seattle area), then moved from a rental house into a house we bought in the last few months. We just had baby girl #3 on Wednesday… hoping to break out the KBQ soon to share with our new neighbors while I’m on paternity leave.

                sourced some madrona wood from an arborist friend of mine, getting delivered in a couple weeks. I’m hoping to slowly but surely but together a Pacific Northwest menu and style of BBQ of my very own! We’ll see, don’t have much spare time these days!

                  Congrats on the new baby!

                  I am going to break out the KBQ for the 4th of July. I just have not had a chance to rip it in a while.

                Did a few racks of ribs for a party a few weeks ago. Ribs came out fantastic. Great color, competition bite, perfect tenderness. Here's a pic of one rack before being wrapped.

                    St. Louis spares (2.5-3 lb) go for 3 hrs for me. Between 240-280 degrees. I wrap after they come off and into a 150d oven to keep warm before serving.

                  Ribs cook fast! I never wrap them. They cook in about 2-3 hours at an average of 250 F, pit temp.
