Finally had a day with practically zero wind so firing up the KBQ for its long-awaited maiden voyage. So far temps are rock solid and easy to control. Just smoking a single rack of baby back ribs today while I start my learning curve.

Nice, I will be interested to see how that works. I have never smoked with Mesquite in the KBQ. That is gonna be full flavor. The KBQ is the perfect smoker to use for a wood like that.
I would run the KBQ with the top poppet closed and the bottom one wide open. And make sure you have a solid, thick coal bed.

Thanks Spinaker! That’s how I have the poppets set. And I’m using the Bill-recommended ON/OFF kill switch whenever I add wood or stoke the coal bed. Figure about 4 hours for a single rack of baby backs maybe?

lostclusters seems fair to me! The size of the Mesquite chunks happen to work perfectly in the KBQ with minimal splitting required.

Congrats. I love my KBQ. The kill switch works great too. No face full of bellowing smoke when you open the door. Ribs look delicious. My first time on my KBQ I did ribs too, but forgot that the KBQ is a convection oven and my ribs were done an hour early.
