Loving my KBQ more every week. Had to post something here just to wake up the KBQ channel as not much been going on of late.
Did some grass fed beef shorties yesterday.
Cook was 5ish hours at average 250f unwrapped, then a 45 min rest wrapped in butcher paper in the cooler. Used a black brisket rub over a light coating of a (very hot) hot sauce binder that I wasn’t expecting to do much but imparted a perfect medium-hot kick on the finished product.
Had the poppet open all the way and bottom half closed for a stronger smoke profile for this cook.
So easy to turn out amazing food on this phenomenal machine. Dial the temp once, feed it logs, and prone for tenderness when the time comes.
Served with dauphinoise potatoes. It was really really good - bark was amazing, smoke profile just what I was hoping. And of course the KBQ lipstick for the visual appeal.
