I build this smoke gun from leftover header collector and muffler and some spare copper tubing. I use an aquarium air pump to draw the smoke. The exit pipe goes in to the flame of my propane smoker to reburn the smoke.
Work great and smokes for hours vs the trays in the smoker. I use it for over night smoking, so I don't have to refill the wood trays every hour.
I have not used it for cold smoking cheese, but seems well suited for doing it.
