Finally, FINALLY able to have a fun, BBQ-centered weekend! It’s been a torrent of work related stuff, weddings, birthdays. But this weekend, we’re making up for lost time!
I’ve got 11 St. Louis racks in there. 10 are for customers who’ve booked them through social media and one is my lunch! Then later today we’re taking this still nameless smoker down to the lake for another rib cook tomorrow, this time with friends.
While I cook I’m gonna catch up with a lot of stuff I haven’t seen in the Pit.
10-4 just got back from the market with 12lbs of pork ribs, 6lb pork shoulder and 10lbs pork chops.
Ribs were on sale, others were marked down 40%.
Hope I have enough charcoal on hand.

Welcome back to LIFE! My wife and I enjoyed a couple weeks off earlier this month after not having any time off since Xmas. It was amazing. Hope your down time is equally rewarding...with that pit and your plans it sounds like it will be!
So, we brought the smoker down to the lake with a group of friends. But we hadn’t hung out in a while and the drinks flowed a little too freely. Long story short, I slept in and running late on the ribs. Plus, it was supposed to rain but the weather is beautiful so while I love smoking and grilling, we’re going boating!
Still gotta cook lunch though, and we’ve got 6 racks of ribs which we’re gotta cook hot and fast per the Rendezvous Ribs in a Hurry recipe. Any tips?
