    Building a Gravity Fed Charcoal Smoker

    Well - Here we go! I've decided to build myself a gravity feed offset smoker. The cook chamber will measure 28"W x 27" D x 40" H. Plan to have four racks spaced about 7" apart so we should be able to comfortably hold eight full packer briskets. Will also add a couple in between those to give us more acreage for ribs and jerky etc...

    This is a rough sketch I've made on our CAD program.

      Awesome! Looking forward to seeing it, this is one I have on my bucket list... SmokerBuilder has a good discussion on this topic he discussed in depth on one of our Wednesday night Zoom chats.

          Loving this. I'm living vicariously through you, I've been seriously considering one of these. But with my Super 55, I can cover most of it, just not as much single-cook capability - but similar flavor profile. I just need to get off my duff and paint mine so I can get to using it.

          But I do want to build one of these someday...

            HAPPY 4TH NEIGHBOURS!

            I'm pleased to report that the smokers are finally finished.
            We painted them with a high heat flat black paint. The doors are painted with a metallic red paint.

            Yesterday we fired them up with the help of Thermoworks Billows. They were both at 350 degrees in an hour...
            We seasoned them, with another couple of heating and cooling cycles.

            I loaded mine on my truck and weighed it at a truck scale. It comes in at 990 lbs!!!


            I'm planning to cook a few things on it tonight and tomorrow night for a bit of practice. Then Saturday I'm cooking seven full briskets for a church youth group... (Insert crossed fingers emoji)
