Ribs on Jurassic Smoker

4 SLC's. Lit at 1355hrs, running 246-250 at 1403hrs.

I'd like to run 250-275 for ribs. I like temping ribs. Typically I'm 1 out of 3 on proper probe placement. I nailed it on a rack last night which allowed me at least 4.5hrs of slumber before I was performing a bend test.

Yeah, I'll need them for brisket since some briskets need to hang perpendicular to the rods. Straight hooks for the others.

I agree with John^, that’s got to be a rewarding feeling to break that cooker in and see some ribs coming along. That military/Zulu time is pretty nerdy.

I never used it until the time clock at the restaurants I worked at in college. At work now (last 21 years) that is all we use.

Running 260+/- at the 3hr mark 3 ribs were
separating from the bone and passed a pretty good bend test. They got sauced and racked. A stubborn rack is sitting pretty at 170 internal.

My 10 brisket cook turned into 14 so I'll do 8 tomorrow and 6 Friday and heat it all back Saturday morning.
