    Smoker Burn-In

    Thankfully I sprayed oil. I knew would have weak sealing welds somewhere up there. That roof was a PAIN! Got a few spots to seal up.

    My slitted plate for the smoke base is holding in the upper 70's.

    Bottom reading is near the bottom of the smoker

    Top reading is closer to the top.

                Excellent stuff!!!!! How many wood chunks are you using for this burn? About size of the chunk or how many oz?

                  1/2 to 1 fist size. I've had to split some. Looks to be 3-4" wide chunks.

                    I got her up to 400. Kept her 325+ for 2 hours. Looks good all shined up.

                      That's a tight grouping of temps on that baby! Great design and build. Have you decided what your inaugural cook will be? I'm sure many of your Pit buds would be happy to critique it in exchange for a taste.
