OK, so I'm in the throes of MCS. I just bought a gas grill (it was part of the outdoor kitchen I just bought) and now I want a griddle. I've read that there are griddles designed to fit outdoor gas grills. Anyone with experience using these vs a dedicated griddle instead of me trying to explain to Mrs. OmegaDog why I need something else to cook on (like the Blackstone I'm looking at)? Any thoughts on stainless steel vs. cast iron griddles? Specific brands that anyone would recommend? Thanks in advance for the advice!

I’ll second this. There are lots of others but it’s hard to beat a heavy solid slab of steel. Works indoors well and for baking also. Check their sizes for the one that will work best.
I have a custom made griddle from GriddleMaster in one of my gassers. they describe how to measure on their website. you order, a few days later it shows up at your door. I love it.
ditto the griddle master. I like it, it works like it should and I can swap the regular grates back on the grill for "normal" cooking (or frying) also. Only thing I didn't like about it was the lack of a grease drain....and I find the video on their site showing the dude "spooning" the grease off to be about the worst sales pitch I've ever seen....so I cut a couple slits into it at the back for grease to drain (being careful that those slits fall BETWEEN BURNERS for obvious reasons....it works perfectly.
A cast iron griddle is an easy and cheap solution, but no grease drainage. I generally just use the flat side of my grill grates like Attjack does above.
I have a pretty nice cast iron griddle I was using on my gas grill but I think it's generally going to stay inside for use on my stove now that I have the Grill Grate.
Grill Grates also offers a flat griddle sheet that can lay right over top of the existing grate or replace it...(have to admit I bought one but have not used it yet, have not done pancakes or eggs on the gasser yet, LOL)! Love the GrillGrates!

I've had great luck with the 18"x14"x3/8" Baking Steel griddle on my gasser. It has a pretty generous grease trapping groove all around that is very easy to periodically clean out with a paper towel:
I saw the Griddle Master Youtube videos and had one welded. It works great and I love it. As mentioned there is no grease drain but that is easy to work around.

I use GrillGrate griddles plates on my gasser. The only thing I do not like is where they link together. there is a small rounded ridge that runs the full length. So if I want to do larger quantities of veggies or even liquids (eggs and stuff) the spatula hits that and makes it more difficult to move stuff around. The plates are wider than the grates.
