This arrived today: 24" plow disk griddle from Maverick Fabrication of Sanger, Texas. It weighs about 35 lbs and is sitting on my Cajun Cooker in the picture below. After doing a quick seasoning, I broke it in by cooking a pound of diced bacon.

There are several on the internet and on ebay. Here's another brand that I found: https://disc-it.myshopify.com/products/cooking-disc
I ordered mine with the 1" ring around the edge to prevent spills and the horseshoe handles.

After spending most of the day racking several batches of home brew, cleaning kegs and kegging some of the beer, and flushing the lines on my keggerator I used the discada for its first real cook today: Fajitas. They turned out good but there were issues: I put the veggies on too soon and they overcooked. I used premarinated fajita beef and chicken from the store - for some reason store-bought premarinated chicken always seems to end up with a weird texture. Next time I'll buy fresh meat and marinade it myself. Final note - I like queso on my fajitas but I don't like this brand of store bought queso that I used.
I was thinking of making migas tomorrow but I don't think the disk is seasoned enough for eggs, plus it is supposed to rain.
