I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Okay, the griddle was assembled Thursday, but with one thing and another, I didn't get around to burn-in and first cook until today.
Here's a bit of steam or something coming off during burn-in.
This thing cranks out the heat! By only 5 minutes in, we were at or above 400 degrees all along the center from side to side, a bit cooler toward the front edge. By 10 minutes, we were above 600. Just before shutting down, reading the center from the right burner to left was 580, 653, 673, 678 and 647.
Decided to do a simple cook of some bacon and some blueberry pancakes. I still have a lot to learn on temp control, as I started on high for just a couple of minutes and then started turning the burners down. Before I knew it, we were at 500. So I turned off three of the four burners I had started to let things cool some. When it was cool enough, put some food on and then restarted on low once temps dropped too low (thank you to whoever put up that Blackstone griddle temp guide, I'm getting that baby laminated to keep handy). Overall, I'm happy with how this came out.
Edit to add: as advertised, 30 seconds of clean-up put the surface back to pristine condition.

Ugh. Just did a bunch of searching online, and it doesn't look like anyone makes a foil liner pan for the grease cup. On this cooker, the cup is 6.5 inches by 2.5 inches and 3 inches deep. Guess I'll just have to go old school and wash the cup after use. How archaic.
