I use food grade mineral oil on the outside of all my carbon steel cookers and spray oil (Pam) on the inside every couple of months. This really helps keep the rust at bay. Maybe something to consider.

Redwng what do you think about mineral oil sprayed on the outside of a camp chef griddle? I'm in FL as well and rust is super hard to keep at bay.
