    A new toy arrived yesterday

    I have wanted an outdoor gas fryer for a long time, but could not justify buying one - not to mention the look I'd get from SWMBO. However, the last time I fried something she did not like the mess it made, (always makes), even though I cleaned it all up. So I said that I could buy an outdoor fryer and keep the mess outside. To my surprize, she said OK.

    The fryer did arrive yesterday and I assembled it s far as I could. There were problems... The fryer itself assembled easily - not much to assemble, but one part was bent, but not enough to make the cooker unusable.

    The stand was a different matter. The paint was scratched off in 5 or 6 places, and some of the scratches were pretty big. I can fix that, but it looks like the stand was shipped that way. One part was missing, and I had a part that was not mentioned in the instructions for my cooker. I did finally find it in the assembly instructions for a different model. The big problem is that the cooker will not fit in the stand. One end is wider than the other end and will not go all the way in the slot. I flipped the cooker 180° and it would not go all the way in that way either. The cooker does not sit level in the stand, so I'm not gonna use the stand yet. I do have an angle grinder, (doesn't everybody? ), so I could grind the slot wider, but you'd think they would have noticed that.

    I cleaned the cooker yesterday and set it on the table for my Weber Performer for now. The oil went in today, and I cooked some potato chips, (no photos - I wuz just playing around). First, that thing is LOUD! Nan could hear it while she was inside. Second, the adjustment valve on the regulator is super sensitive. It's gonna take some time to figure out where to set it for a specific temp.

    BUT - cleanup was much easier than the indoor cleanup.

    That thing looks strangely like a blue Weber Performer with some sup'ed up Binford contraption on it.

      Man I have toyed with the idea of getting a Cajun Fryer for years. Really interested in how you like it. From what I understand you can leave the great in this for months because of the way it filters out the trash. Looking forward to learning more.

      You will love this fryer. I would contact them and tell them your issues. They will make it right. Also, make sure you are putting the fryer body into the stand correctly. I know this sounds stupid, but I did not have it in the stand correctly when I first got mine and I felt like an idiot when I called them. LOL.

      You do not need to run the fryer on full blast to heat it up. I run it at about half throttle. (You do not want flames coming out on the exhaust stack.) It is a little loud, but you do not have to run it that hard. You a run it on low flame and still heat it up just fine, it will just take a little longer. And it will be much quieter.

      Shoot for about 350 F. Once you drop your wings or whatever you are cooking, the temp probably will not drop unless the food is very cold, there is a lot of it or you shut the heat off entirely. I back the fire off once I have it up to temp, then oil will stay hot with most food introduced into the fryer. You only need a little flame to keep the heat up. 1/4 throttle is more than enough.

      Get a grill pad to put under the fryer. It will splatter a bit with different foods. Make sure to dab wings with a paper towel or let them sit out, uncovered in the fridge for a while to dry out, that makes a huge difference for splatter. NEVER put frozen or wet foods into the fryer. Try to get food as dry as you can before adding it to the fryer.

      If you make breaded food, drain the oil and filter it, then add it back in. You do not have to do this all the time, but every few cooks is a good idea to make your oil go further.

      If you just do wings, you can keep that oil for a long time.

      Do not go over 400 F, that will oxidize your oil and ruin it.

        Thanks guys. Steve B I already bought a mat. I just need to remember where I put it...

        I did put a Thermoworks thermo in the oil as a check. It was in the front very close to the built in one. The difference seemed to vary with the temp. At times it was very close, and at other times is was close to 50° off. I will use it again the next time I run the cooker.

        I'm thinking that it should ok to drain off oil until it runs clean and then add the filtered oil back.

        As far as getting it to fit in the slot in the stand, the cooker is too wide on one end and just won't fit. I turned it 180° thinking it might only fit one way, but it still wouldn't fit because one end is too wide. Emails were sent Sat night, but I don't expect to hear before tomorrow.

        Ron, the oil won’t clear up as you drain it. It will be the same throughout. And only some of the unwanted stuff on the bottom will drain out as you drain the unit until you get to the last portion.
