The regulator varies the PSI inside the sealed cooking chamber, breaking down the connective tissues in meats much faster. This gives you fall off the bone tender meat in world record time!
I have the Cajun fryer from this same manufacture. It is very well built and works great.
But this cooker is not like anything I have seen before, and it sure as heck sounds cool. I just wonder how well it actually works.

I think you're right about getting bark, but then again Myron Mixon water smokers have a giant water pan, and so do WSM's. So who knows? Why don't you get one, and let me know how it works?

There are a few reviews by users on other forums. One person reported it needed some modifications. Another review explained how it worked and really liked the food. Brisket lacked a smoke ring, but didn't care because it cooked so fast.
Who gives a rip about this or that, just git it, then tell us why we should git one. This is what the PIT is all about ! Gittin stuff! Or it used to be. We need to light some fire under our Smokey butts and pile it on! If'n ya ask me we have gotten a little sleepy 'n all. Mo cookers, Mo stuff. Mo meat!
