I got my Grill Grates today - what to cook?

    The first thing to hit my GrillGrates were pork belly skewers. I rolled these in Memphis Dust after a couple days of dry brine just before they hit those grates. I also wrapped a couple of thighs and jalapeno slices with bacon. Then I butterflied a chicken breast and stuffed it with basil and mozzarella and tied it off with butcher string. On the veggie side I filled portabellos with ricotta and a little balsamic reduction on the bottom and hit it with some more when they were finished. I used the flat side of the grates to cook some asparagus and carmelize a handful of cherry tomatoes.

        Just ordered a set Monday, cannot wait, Rib eye's........ I'm going to enter a few steak competition's this year. Did one comp in the fall came in 2nd. I think there is only one company that make them.

        Attjack, The Steak Cookoff asso is hosting more events every year (esp in the midwest and south). While they have divisions for appetizers, chicken, desserts and youth Rib eye steaks are the main event. I've attended several that were held adjacent to Big Green Egg events. Good people, good time and open to everyone, not just the pros.
