    Questions about setup (Genesis II E-310)

    Hi everyone, new to the site and have found it (and the book) to be invaluable. I just got the Weber Genesis II E-310 and am doing the dry runs / calibration recommended but had some questions about how to set it up.

    It looks like for me to reliably hit 225 F with one pan of water, I need to have both the left and center burners on. I've got some 16 5/8x11 7/8" roasting pans which fit well but they each basically half the grill. Should I be using one (which would cover the left burner and half of the middle) or two (which would cover the entire grill)?

    if I do use two, where does wood go? Just on the grate above the pans?

      Welcome! I don't use gas, but on my pellet cooker, I've been putting the water pan under the meat to catch any drippings.

        That makes sense. My concern is I plan to put wood chunks on the "flavorizer" bars over the middle burner. If I add another pan, not sure where the wood goes -- will it be hot enough above the pan on the grill to ignite?

          When I use pans on the e-330 (1), the one on the left is on the grate and has warm water, and the one on the right goes under the grate and the food goes on the grate. I can hold a steady 225-250 with just the left burner and the water pan. Dunno about the agen 2 though.

            Thanks. I'll double check again tomorrow; maybe I wasn't patient enough. With your setup do you place wood chunks beneath the hot pan then, below the grate?
