I thought I'd start a new post as it's a new era. You might recall, I melted my Genesis and off to the dump. I got my Spirit up today with the delivery of the replacement. A Weber Spirit E-330. Did the burn off but going to have to wait to use it. Pre Birthday Celebration. Daughter now coming over and we're ordering in diner. I'm not allowed to cook. I'll get to it maybe tomorrow.

I've pulled a bone in rib eye out of the freezer it will be Sundays initial cook as no family stuff till Monday for my B'day. I'll do indirect and as I did this cut on the Kettle, then direct for the sear. Will load up the smoke tube with pellets. I can't remember the last time I smoked on the gasser. Then I'll test out the Sear Station. Stay tuned.

So here's the break in cook. Chicken breast for my wife. She marinades it. I just cook it. Her comment cooked to perfection. So I passed that test.
Later on a bone-in rib eye. Did indirect to 115. Then the sear station. Hickory chips in smoke box. Will be a bit of a learning curve with the sear station. But not bad for a 1st cook.
