    Small Searing Machine

Looking for a small gasser to use purely for searing. I have a big Rec Tec pellet smoker and a Weber kettle, but for steaks and other reverse sear projects I'd like something that I can move off of the pellets to finish off without going through the charcoal setup. Any suggestions?

The simplest would be a cast iron pan on your stove.

Or on a burner perhaps an induction burner.

    Agreed!

Alternatively, one of these from Searzall:

Think of it as a single burner handheld salamander.

Kathryn - Depending on the size of each one, about 2-5 minutes per steak. That works fine for just a couple of steaks, but if you're planning on many more than that, it can be too slow.

Love the searzall for 1-2 steaks, more than that and it's too slow. (though I have been known to use BOTH a hot CI pan or a chimney PLUS the searzall when really impatient.)

If you want one that will last a long time and be useful in general for outdoor cooking, I would look at the Weber Spirit II 2 burner model for $399. You open up a lot of options - use the included cast iron grates, throw cast iron skillets or griddles down, or install Grillgrates or a Little Griddle cooktop.

I have a 2 burner Genesis from 2002 that is still going strong, and if I had not found a 4 burner model on clearance this past winter, I would still be cooking on it. It's in storage for one of my kids now.

Seconded. If I had known I was getting the Grilla, I would have bought a small Spirit instead of the big Genesis.

This is what I have. A Weber Spirit 2 burner with all the options mentioned above. I use it often.

Get a small IR grill. A good IR one will get hot enough.

these are very good but not so cheap.

These grills are searing machines that can sizzle steaks, burgers and shrimp, but lack the ability to perform at low to moderate temperatures

I had a small IR grill, I switched to the chimney, because I almost always am cooking with coals anyway. For convenience, a small IR gas grill (if it's a good one) is fantastic. OTOH, a chimney wins the heat/cost every time.

I sear steaks over this thing routinely. It lights my chimneys.

I sear my steaks on my griddle with some beef love and they come out great, maybe a small table top Blackstone would work for you.

Hmmmm... I wonder how a OONI Koda with Grizzler pan would work? And..... you could make some pizzas too. Thoughts from Pit masters?

Its precision control dial gives you a ton of flexibility over what you can cook. Turn it low to roast meats, or crank it to cook Neapolitan-style pizza in just 60 seconds.

Is it a Griddle? Is it a Sizzler? It's both! Say hello to the Ooni Grizzler! I've been meaning to try searing on my Blackstone pizza oven. It gets to 900f and is self rotating.

I was wondering about that as well. Probably would use it more even for that if it was effective. I guess it depends how it handles grease amounts since pizza generally is dry(ish).

Thanks for the replies everyone. Such cool stuff on the market. I'm thinking that this is a good option for me based on the review. It's not going to get too much use so I'm not so worried about durability.

This grill earns our Platinum Medal for exceptional performance under $200. Not built to last, but will out sear any comparably priced gasser.

Not as small as some of the stuff you guys are giving me, but I'm OK with that. I could be doing 4-5 steaks at a time so I don't want to just have a 1-steak pony.

              Thoughts?

I remember when Max came out with the review of this and thought it would be a nice part-time grill. The btu's are legit, put some GrillGrates on that thing and you'll have a bada$$ searing machine. It looks like what you're looking for. Should be pretty affordable as well.
