The idea of a reverse sear needing to be kept moving (watched close) begs the question:
Does any company market a gasser with the heat shields at least 18 inches away from the grill?
Probably 24 inches would be better. Too much meat can be ruined by the grease fires that happen because the diverters are too close to the grill....in my opinion.

Yea I believe they do warn about warping over about 700*. I always take a quick thermo reading with my gun just to make sure. My gasser can get them close to 850* in the right conditions.
The true IR by charbroil works the same way. My professional series is 3 years old and still kicking strong, a quick scrub and she looks new. Performes like a pro too. Never had a flair up, one it is used at least twice a week.
