Over the weekend, I found a new (and still in the box) Masterbuilt MPS 230S propane smoker on Craigslist. It's now out of my car, with intentions to assemble and season it this weekend, despite our single digit and below zero temperatures we are expecting in Iowa. For anyone who has this model or a similar model, I have a few questions.
1. I am planning to assess where the seal might not be as tight as I'd like while I'm seasoning it to see if I have any gaping issues to resolve before I actually make the important things (like meat, eggs, and cheeses). Does anyone have a similar model and thoughts you would recommend?
2. From everything I've read, it seems like using lava rock with a cast iron pan on top to hold the wood is likely a better approach. Any red flags here?
3. As I'm navigating where this will "live" in my house/yard, I'm considering a cart and wondering if there are any recommendations if you have a similar size or type smoker.
4. Soliciting any and all other opinions about this new toy and cooking device. I may not use them all but will be thrilled to read your insights.
