I only have a gas grill, but would like to dabble with some recipes that require smoke. What's your suggestion (beyond just buying a smoker)?

I've used a few gassers (decent ones from Broil King and Weber) and could never get real smoke flavor. I've used smoke tubes, wedgies, foil, etc but no real success. The vents needed for gas airflow means that smoke doesn't stay in the cooker. I ended up with a pellet smoker and I use my Weber Summit for searing and rotisserie, and now looking at an UDS for charcoal. I also use SV quite a bit and you can cheat with liquid smoke and curing salt with this method.

What others have said. I either put a handful of wood chips in an aluminum pan (disposable), or simply put wood chunks directly on the grates (over the one burner running). Either way, see Meathead's article. Like MichaelF says, it is hard to keep the smoke in the cooker. I've done it for years, so it definitely can be done, and it is also a nice way of experimenting with wood and smoke flavors before you decide on a dedicated smoker (if you plan on getting another one to begin with).
