Need new grill for basic cooking. Looking at Weber Spirit ll, 2 burner or 3 burner. Also looking at Char Broil commercial 2 or 3 burner. No flare ups is appealing. Had a Char Broil infrared cooker for many years and enjoyed it but it has played out. Weber seems to be better quality and has a great 10 year warranty. Does the Weber control flare ups well or not? That is a big concern for me. Any comments will be of assistance. Thanks

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I bought my son a Spirit II E-310 3 burner as a wedding gift, and helped him assemble it a couple of weeks ago, and also helped my dad assemble an older Spirit E-330 about 1 year ago, before the Spirit II came out. All in all, I am impressed with the new GS4 burner system, and also feel that the open cart construction of the Spirit II is better than the previous closed cart Spirit. The metal and construction of the stand just seem stronger. Not like my 2002 Genesis Silver A, which used square tubular steel and assembled in under 10 minutes, but better than the previous Spirit for sure.
I don't think you can go wrong with the 2 burner or 3 burner Spirit II. And as you point out, they have a 10 year bumper to bumper warranty on all parts. The added bonus is that you will be able to buy parts for it still in 20 years, if past history is any indication (I can still find parts for my Weber grill made in 2002).
We grilled a bunch of big 80/20 burgers to break in the new Spirit II 3 burner this past Sunday evening at my son's new apartment, and while you would have the brief bursts of flame as hot grease hit the flavorizer bars, we had no issue with major flame-ups that lasted.
On any gas grill, I highly recommend a full set of Grillgrates - that solves the flame-up problem many gas grills have, permanently. While you may balk at spending $100 or so on a set of grates for a new grill, I think they are a game changer for gas grills. You can "grill" with the railed side up, or "griddle" and make smash burgers and fry stuff with the rail side down, and flat side up. And any flame ups underneath the grate really cannot reach the meat. They made my 16 year old Genesis into a better than new grill.

Would you consider going to charcoal? The Weber kettle is very easy to use. I would echo the comments above on Grill Grates if you stick to a gas unit.

Ended up with a Char Broil 3 burner, Lowes black friday deal for $89! Hard to beat that price Boy this grill will get HOT fast. Have only used it a few times but really like it so far. Not expecting it to last forever but I do keep it in a storage closet off my patio so this will help. Looking forward to the temperature control of a 3 burner grill.
