I have a Brinkman gas grill. Its an old one and I just went through it and rebuilt it. Discovered that the cast iron grills are flat on one side and pointed on the other. Flat side up will sear a steak with a quarter inch wide strip. With the pointy end up there won't be much of a sear strip. They will set in the grill either way. So which way is better. I will be using this grill for hamburgers and steaks.
The burners on this low cost device are likely low power and incapable of generating high radiant heat for searing. Therefore use them grates flat side up so the cast iron can more effectively sear by conduction heat as you observed.
