reverse sear steaks on the indirect side on a gas grill
I usually cook on my Weber Kettle and PBC at home. When my family and my siblings' families go to my parents, I'm on steak duty on their medium sized gas grill. Everyone has different tastes. I'd like to reverse sear everything but there isn't much room on the indirect side to fit all the steaks. Has anyone ever indirectly grilled steaks on their side to get more capacity before blasting them individually on the hot side? If so, I'm curious how you did it.
Yes! DeusDingo is spot on. Just like with ribs, if they don't fit, have them stand up vertically. Since you're cooking them indirect anyway, it will work just perfectly. Then move them over one by one and sear the heck out of them before serving.
