do I build a permanent table or buy a grill on stand that can be moved around? wind in NE. & smoke under a canopy both concerns. any thoughts or experienced comments appreciated!

daveyd , can you clarify... have you located a place that you want to create a permanent outdoor kitchen and have an exact spot and some kind of layout picked out?
If you are wanting to build a permanent outdoor kitchen that incorporates the grill... i have seen plenty of counter areas built with a cutout that a grill can be rolled into as opposed to the drop in units.
As far as under roof goes it is going to depend somewhat on how low the roof is, is there ventilation, if it angles, and in what direction. Some people say it is not a problem and others complain about ventilation and discoloration. Also you obviously want it away from anything that could melt or easily catch fire. google outdoor kitchens under roof or grill under roof and there are some pretty awesome ideas.

I don't think there are drop in's on a swivel. The hood should block the wind just fine. Your 10' ceiling should limit any coloration from the grill exhaust. You might want install a fan to guide the exhaust out of your patio area.
My son just redid his patio area and used a drop in 36" grill. He selected the Lynx brand. They make a really nice product and have lots of great options, like a smoke box and a searing griddle. Plus they block your anticipated wind problem.

We built a wall to take the wind and rain out of the picture. Our roof is cedar and I will be adding an exhaust fan this summer. We cook on Premo ceramic grills so the Canadian winter weather does not affect our internal grill temp. I have not turned on my NG grill since I bought the charcoal unit.
