Napoleon has three flat top options for the P-Pro 500...a plancha, a cast iron reversible griddle and a stainless steel griddle. Any experienced Napoleonics want to weigh in on which one of these I should get?

I would go with the cast iron griddle. They retain heat, cook like a dream and you can do a great reverse sear combo right on the grill. Not to mention all the other things you can cook on a griddle. And you don't have to worry about the griddle warping under high heat.
You can get the stainless one, but cast iron will retain heat better. They are a bit tougher to take care of, but not that much more work.

I use a enameled cast iron plancha I picked up at William Sonoma several years ago. I just put that right on the grates and its good to go. easy clean up and no cast iron maintenance needed.

Enamel coating can crack, chip and flake over time. Most manufactures don't recommend them on grills since they are usually rated to about 500F, the grates can also chip the coating as well. This link below is for a skillet but the coating is the same, look under "use and care".

I have this thing. It is the Little Griddle GQ-230. All stainelss steel, it won’t warp because the underside is braced well enough to support a truck. With handles it is 25W x 16D x 6.5H and without the handles it is 23.5W x 16D x 4H. I put mine over my grill grates and it fits over all 4 burners.
I have to check the measurements on the Napoleon I’m looking at, but I think it will fit over the heat tents once I remove the grates and warming rack. The Napoleon heat tents can easily take the weight, they are stainless steel and supported by cast aluminum. But even sitting on the grates it will probably get plenty hot.
