    I didn't wait a week or two.... the smoke coming out of the smoker was super white and smelled yucky, so it seemed like the cheese would be similar as well. I smelt the cheese 24 hours later and it was that same bad smell the smoke had during the 2.5 hour smoke.

    I bought some new pellets today, and more cheese, and am going to try it again. My prior pellets were kinda old, like 4 years old, so perhaps that was the problem.

      that would probably do it, pellet tubes do produce thicker than "thin blue smoke". Let the pellet tube burn for a minute or two, blow the fire out, wait a minute or two then put the cheese on, then after 1-4 hours wrap cheese tightly in plastic and let sit in the fridge for a few days, try a slice, if too much for you give it 2 weeks and taste it again.

    Yep, $15/40lbs is a good price. Been using pit boss 40-lbs, comp blend for several years. No problem.
    I do get a bag of LumberJack and Traeger just to try.
    May pellet grilling live on.

      Hard to beat its convenience. My wife uses our pellet cooker more than she ever used our gasser when we had it. I have a couple 40lbers of PB out on my deck right now.

    Ya , yesterday I bought the Competition blend Pit Boss 40 lb bag for $15, and also the Pit Boss Apple 20 lb bag, which is what I did the cheese on last night. I also have some 40 pound bags of "Gourmet Blend" coming in the mail from Bear Mountain pellets.

    For my 2nd cheese smoke attempt last night, the smoke was thinner for the first hour or so and smelling good, then got a bit thicker and more white the last 1 to 1.5 hours, which was disappointing. I have the Recteq 700 smoker, which allows me to run just the fan for air circulation, which should help, I'd think. The cheeses I smoked were Pepperjack, Gouda, Sharp Cheddar, and Colby Jack. They're wrapped in parchment paper right now, in the fridge, and then I will vacuum seal them after 24 hours, and put in the fridge for 2 weeks.

      I'm a big fan of Bear Mountain's "Bold" blend. It was one of the few bolds I've ever tried that I thought was actually more bold, for pellets.

      Also, do you put your food in before you start your rig up? If not, give that a try. That initial cloud of startup smoke is valuable!

      Huskee, I need to thank you for the suggestion of putting the product on when you fire the grill up. I started doing that when I read it and it does make a difference! Then I couldn't remember who suggested it.

    I hadn't seen the "BOLD" blend.... darn, now I wish I would have gotten some of that instead, lol. With pellet smokers, my main complaint is always that the smoke taste/flavor seems kinda subdued... maybe the BOLD blend is what I need.

      I typically do the "start-up" with the Pellet Tube just sitting on the patio, vertically, because it seems like it gets more air that way so the fire gets going more.

      What's your pellet tube method for starting it up, and when do you put your food on?

        Pellety advisory, Keep Them Dry, Or so I have been told when I picked up a 20lb bag by a Traeger "Rep". Even gave me a handout. Accordingly, 80% + of pellet grill problems relate to the mishandling, storage of pellets.

          I'm ditching all my old pellets.... throwing them out. I had quite a few.

          I bought 120 pounds of Bear Mountain Gourmet Blend yesterday on Amazon (it arrived today)

          Yesterday at Lowes I bought: 40 pounds competition blend Pit Boss, 20 pounds Apple Pit Boss

          Today I ordered 80 pounds of Bear Mountain BOLD blend.

          looking forward to newer pellets!

          ***one thing that's kind of weird is that the 40 pound bag of Gourmet Blend I bought on Amazon is only available on Bear Mountain website as a 20 Lb bag, and also, the label on mine is different than the Gourmet Blend label shown on the Bear Mountain website. I hope I didn't get Old Pellets!

            Locally, I could only get Pit Boss pellets. Then a few months ago a local hardware store start carrying Bear Mountain pellets. So we switch to Bear Mountain for a while. No complaints with Bear Mountain, but my wife and I think you get a little more flavor out of Pit Boss and the price is also a little cheaper. So we switched back to Pit Boss Competition Blend. I would like to try and compare other brands in the future.

              careful with the Bear Mountain ones, supposedly they changed hands and have been having some quality control issues. Quite a few MAK owners (a bag of BM comes with a new purchase) have had frustrating experiences with their new expensive grill only to find out it was the pellets.

              MAK is a higher-end pellet cooker manufacturer, and in this context I believe BM stands for Bear Mountain pellets.

            Huskee When I was little, I remember my Grandma was always complaining that she wished she could have a BM. I didn't know she ever had a smoker.
