Tonight was burger night. I normally cook them on a small grate on top of a Weber chimney. This time I used the small Weber chimney. My kettle is a Weber Performer Deluxe and has the gas assist for lighting charcoal.
My normal process is to use the gas assist to light the charcoal and then I turn the gas off. Well, tonight I forgot to turn the gas off. I cooked Nan's burger and got a great sear. Then I put my burger on and realized the gas was still on, so I turned it off. As I was flipping the burger, I noticed it was not browning as quickly as my Wife's burger, so I turned the gas back on. The browning was better and faster than with charcoal alone. I guess ya live and learn...
