Looking for some insight, opinions and results.
I bought a bag of Kingsford Long-Burning Charcoal Briquets for the first time to try it out in my WSM. I used the fuse setup. After preheating to 225° I started cooking two slabs of ribs. I know that the temp always drops from opening the lid and putting cold food in the smoker. After about 15 mins the temp only recovered about 5°. I pre-lit some more briquets to help with the temp. I hit my target temp and let it do it's thing. After the 1st hour the temp has drop 10°. I have used the fuse setup for years and always had good luck with it. Pre-lit some more briquets to help with the temp. After the next hour the temp drop 10° again. I had to work the smoker to keep the temp around 225°. After all was done and 6 hours later the ribs turn out pretty good. I had to work harder and use more briquets.
