    lonnie mac and vandy - If you are having trouble sharpening your knives, it could be that you are sharpening at the wrong angle. Most American made knives are sharpened around 20 degrees, but can go to 17 degree, and sometimes even lower. Most Japanese knives are sharpened around 17 degrees. If you sharpen a 20* knife at 17*, you have to remove a lot of metal before the blade gets sharper. If you try to sharpen a 17* knife at 20*, you will create a double bevel , (bevel = angle), which may not hurt, but most kitchen knives only have a single bevel.

    And I have not even mentioned the steel used, or what hardness the steel was tempered to, or how the metal was manufactured.

      Thanks brotha. Yea, I fully understand metallurgy, and the angles and all. Kinda sharp that way. No pun intended! I can keep my Wüsthof Knives fairly sharp, but just not like the day I bought them. I think its all in the wrist.

      I used a sharpie to color the bevel first then got the angle by moving it until the stone took off all the marker so I know I am using the correct angle but there is too much play in the KME system to keep it at the same angle all the time.

      Yeah lonnie mac, I am pretty much the same with that and I can keep some of my knives somewhat sharp just not as sharp as they were when they were new. I am not very good with my wrists either, too stiff from being broken in my younger days.

      I got the Wicked Edge system a couple days ago and I have to tell you, I was not prepared for the build quality of this thing. All of the parts are machined to fit and they do that very well. There is somewhat of a learning curve and I am still learning but anyone should be able to use this sharpening system to get really sharp knives. I sharpened a couple of my Henkel knives and the factory angles were way off and wacky with one side ground at 11 degrees and the other at 14 degrees. The knives that I sharpened are paper cutting sharp now but need a little more work to get hair shaving sharp like I want them to be. Thanks KnifeRobot for that special offer but I already had the Wicked Edge ordered before I saw the posts on here otherwise I may have tried your system out. I probably would anyway but alas there are no more funds available right now to order your sharpener. But thanks for the offer.
