      Sunday's cook... I smoked a 15 pound Prime grade Brisket I got at Costco for $3.99 per pound. The burnt ends were the hit of the party. I also grilled some chicken legs and made some mashed potato's and added asparagus for a veggie. I baked a loaf of fresh French bread while the brisket was smoking. It was a fun day of cooking and baking.

        Pit Boss... To bad you weren't there last night. We had enough food to feed a lot more than the four we had. That's the first time I smoked a Prime grade Brisket. It was outstanding.

        All that food is gonna spill if you leave it upside down for long! or, perhaps you're demonstrating the thickness of the sauce? 😝😝😝 Seriously, these are beautiful pics and it looks like a heck of a meal! and that is a LOVELY boule, too!!

      I always serve my coleslaw in a bowl coz folks tend to drink the dressing.

          Just notified that my camera is on today's UPS truck!! WOO HOO! in time for today's buns coming out of the oven! And I can start working on pie crust!! We'll have Pie on Pi day!!!

            Fabricated the 10 lb NY strip that I got at Costco, which has been wet aging for a couple of weeks:

            I intentionally did them at various thicknesses, but they averaged about 1 1/2 inches and most weighed in the 12-14 oz range when trimmed down.

            Did a reverse sear on one, trying out the Kingsford Competition in the Vortex - damn that stuff gets hot. Had less than 1/2 a Vortex, wide side up, and after 30 minutes they were reading at nearly 600 at grate level. Got a nice sear

            Served it up a modified version of Kathryn's [ fzxdoc ] Chimichurri - I didn't have Aleppo Pepper flakes (& apparently it's hard to get because of the civil war in Syria), so I substituted some Ancho Chile powder. Good stuff

              Yep. The center might have even been a little cooler - but we were too hungry to wait. And I ended up leaving the very middle for the youngest step-daughter, who prefers medium and was going to re-heat it later.

            Nice! What do you think of the Costco NY Strip?

              It's good - the Prime was obviously better than this Choice, but for $6.89/lb it's a great deal.

            OK, just after I hit Post, I rechecked the tracking and it showed that the package had been delivered. I jumped up and checked, there it was! must have dropped it off while I was putting the bread together! I am just now opening the package because no sooner had I brought in the box, my timer started chiming to knead and shape! 1 loaf rising, the other proofing, and I'm off to play with my new toy!

                Taco Tuesday - Fish Tacos

                My grilled baja style fish tacos, this time with Swai. Did some flavor-similar cole slaw sauce with Napa cabbage and added an Avocado "Pesto" Relish ala Bobby Flay (avocado, pine nuts, cilantro, garlic, lime juice, serrano chile). The pesce-vegetarian step-daughter was beside herself.
