I recently got a Masterbuilt 40 smoker and have used it a number of times. I've cleaned the obvious things (grates, water pan, drip pan, meat probe) after each use. At first I cleaned the glass on the door and tried to scrub the sides every time. I'm concerned about using anything stronger than hot water on the door and sides for fear of introducing chemicals into my food. Any thoughts on what needs to be cleaned, how to do it, and how often? Thanks

I would use oven cleaner. Make sure the glass can be cleaned with the cleaner you buy. It will clean it up like new. I would spray then allow the cleaner to work for hours, then wipe it out of your smoker. Finally, wipe with a wet rag to make sure the interior is cleaned. I use oven cleaner on my KBQ, then I simply rinse it out, but I would be hesitant to rinse yours out considering the electronics. It cleans my KBQ up like new.
To be honest, I would not worry to much about cleaning the inside of the smoker. If mold develops, that is a different story; then you need to clean it out. Normally you can clean out any heavy build up and your pretty much ready for the next cook. A quick wipe down of the inside with some of these blue shop towels is also advisable. They suck up the grease and they hold up. This can be done pretty easily when the smoker is still hot.

If the appearance doesn't bother you too much, I wouldn't worry about the sides. I would definitely clean around the door seals and the exhaust vent. The water pan and drip pan you can line with foil each time for easy cleanup.
I sold my 30" MES on Craigslist after I scrubbed it out with several SOS pads. That was not fun, but she sure was shiny and clean!
