    Brisket on PBC- Grate or hang.

    Anyone out there use the PBC for competition brisket. I have a comp this weekend in WV and will probably have to use my PBC for the brisket but wasn’t sure if anyone had luck using the grate instead of hanging. After trimming it should fit on the grate, it’s a 20 Black grade and I’m afraid if I hang I’ll ruin the point.

    You could always hang it flat down, and just not use the very end of the flat, use slices more central. I have hung it both ways but never for comps, so my advice may not be what your'e looking for.

      I don’t hang brisket and shoulder. I’m not risking a drop or wanting to bother switching to the grate when it’s getting tender.

      I wired another grate under the PBC grate for more capacity.

      to add: If you plan on wrapping you could Probably hang up till that point. Be sure to daisy chain hooks across the brisket for insurance.

        I have used the PBC for many competitions. I always hang it. I usually hang the flat down. I chain a couple of hooks together. I start the first hook, the one that hangs from the rebar, about 6-8 from the top of the point and let it flow over that way the flat is not so close to the coals. Works pretty good. I have placed 2 times. The larger competitions are very competitive. Good luck!

        I’ve only hung them flat side down and based on the results I’ll never do it any other way.

          Gosh no pictures of hanging the meat. The PBC website should show how to chain the hooks together. I just start the hooks lower so the brisket hangs higher-up.
