What kind of chicken are good for competitions? So far I can find the brand Perdue in a local grocery store. It was good tasting but rather small/medium in size. Red Bird is good sized but skin is trimmed and really doesn't wrap around all sides of chicken.

Traditionally a chicken has 8 parts. Although I have been known to buy and extra leg for the ride home...

Lately, and funny you ask, I have been going through a gambit of chicken sources. Air dried, hung right side up, hung upside down. Grass fed, free range...

I think the choices have become a gimmick myself. My HEB has a whole wall dedicated to fancy packaging with beautiful chickens I have never heard of. Makes it so hard to choose.

Lately for me, still, Tyson, Pilgrims Pride smells like supper. Very sad.

We do have a Costco. May have to get a membership. Headn to restaurant depot in denver this weekend. KCBS members get a free day pass. I've came this far (creekstone farms for prime brisket, compart durac for ribs and pork shoulder). Haven't found a source for good big chicken thighs.
