I would absolutely do it. Im an idiot. You know your sh— er, stuff; if I can do it, you can do it.
Draft controls and remote/stay in monitors are strictly for at home convenience, so you can pay attention to multiple things, go to the store, sleep on an overnight cook, etc; convenience. At a competition, you’re going to be there paying attention the whole time anyhow. You don’t need the convenience. It serves no purpose.
Photographic analogy:
Situation #1) Im going to The Air Show! Oh boy! I’m going see lots of great airplanes, talk to people about them, meet some friends, and have a blast! I’d better set my camera to full automatic, and dynamic picture mode. Better yet, just use my phone.
Situation #2) I’m going to The Air Show! I’m going to get great photos of airplanes, angles, shadows, up close, far away, in motion, static, old, new, great crowd shots… I’d better shoot full manual and raw.
You’ll be in situation 2.
I might come visit. It looks like the kind of thing I’d enjoy. I’d enter, but I’m pretty clueless about what goes into it, I’d rather see how involved it is first.

The Meadow Creek has gas but I mainly only use the charcoal tray. I got the gas model so that I could put the gas on to keep things warm after cooking but I have never been able to keep the pilot light lit while I was using the charcoal tray so I never fool with the gas. Wish I had bought the one with the slide out tray and no gas.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I would do it.
First off - the restriction on no fan controllers is not a big deal if you know your cooker. Especially on a shorter cook for chicken or ribs. And not being able to have a leave in thermometer I assume excludes grate thermometers too - on my kettle and kamado, I've learned what the dome thermometer reads well enough to trust it for many cooks.
And for chicken parts or ribs - I do not use a leave in thermometer on either of those type cooks anyway. Just my trusty Thermapen. You kinda know when ribs are done by time temp and feel, and with chicken - you know when to start checking things with the instant read thermometer.
So I say GO FOR IT. I would most definitely enter such a cook, and would probably take my Performer to it, since I would never want to transport my SNS kamodo.
