The most recent addition is a Pit Barrel Jr with bird hanger, 4 hooks and cover. ThermoWorks Smoke 2 probe, DOT, 2 ThermoPops and a Thermapen MK4. A Thermoworks RFX Gateway 2 probe meat thermometer.

Thanks for all the good wishes! It was a contest that I’ll not forget, but not for the expected reason.

Next came the cooks meeting, along with organizer Shannon Wall’s cheesy bread! The supper of gumbo, red beans and jambalaya followed.
I went back to the van, ate my meal, set the alarm and crashed. At 1:30 up I was with gastric difficulties. That didn’t stop. I decided that there was no way to cook this contest in the state I was in. My neighbor helped me hook up the cooker, I left at 6:30 heading home. In all my years doing this, I’ve never left sick.
I needed to cook that brisket! Chicken could go, but that brisket had to be cooked! It was almost too big for the GMG Trek.
175 is the temp. I wrapped it and have it finishing in the oven at 200. It will likely not be eaten. I’m doing BRAT until my gut settles. Glad I have half a loaf of sourdough bread. Makes for tasty Toast!

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

Oh my. What a rough break. Driving with gastric difficulties sounds like a big challenge. Enjoy the brisket when you can and we look forward to the next competition.
