World Food Championships -- The Ultimate Food Fight!
The World Food Championships is coming up the 2nd weekend of November in Orange Beach, Alabama! Is anyone planning on going?
Cowboy Charcoal has an added event, the Fire & Ice BBQ Championship (tags on to KCBS contests), only for women-headed BBQ teams. The top 10 teams get a ticket to the WFC, where Friday evening all 10 ladies go head-to-head cooking protein of choice on Deep South Smokers. Right now, BBQr's Delight is team number 9! It'll be interesting to see if I can hold in the top 10 for the next 3 weekends.

Thanks everyone! Assuming I do get the call, the first challenge is a 2 hour cook where all the ladies cook on a Deep South Smoker. They are calling it grilling, but the cooker looks like a Backwoods Smoker. 2 hours isn't a long time to prep, cook and plate! It's going to be a "fancy" plate presentation too. I'm tempted to do reverse sear beef tenderloin with fancy saucing with Secretariat and Red Wine sauces. Carved smoked new potatoes might be a nice touch too. Smoked meatloaf and pig candy come to mind too. What do you think would work?
Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

This is pork tenderloin rolled around a mixture of shrimp, panko, onion, flat parsley, pine nuts and my super secret soy glaze. Next time I'll add water chestnuts for crunch.
I think going Asian in flavor will be different. I'll need to prep and cook at least 4 of these for the first round of the contest.

It must be nerve racking to cook under that kind of pressure. I wouldn't be able to do it.
They changed the rules TWICE!!! Last change was at the cooks meeting right before the cook! But we all had to deal with it so it was fair. I must have won with this because I was bottom of the BBQ barrel the next day (70/89) and still made 4th in the ladies contest. I was happy with this, I'd make it again.
Looking a bit worse for wear! That's 2 hours with film crews and commentarians and interacting with the public while cooking. The dish was delicious and pretty.
