    SE Texas Craft BBQ Festival

    A (cold) day of BBQ and brew. Vendors are mostly food trucks but 1701 BBQ cooked a whole pig and Redbird BBQ was open next door as well. Local breweries and various arts and crafts tents lined the street. There was live music on the back patio of Avenue Axe.

    At 3am it was 65 degrees, by opening at 11am it was 45 degrees. Brrrr.

    More pics later but here is the whole hog. Yum!

      Super interesting to see they intentionally remove the skin over the back so the ribs etc get bark!! I never would of thought of that without seeing this. 🔥🔥🐿️

        When I do whole wild hog piglets I remove all the skin too. Same deal, plus way easier than scalding them

        The band on stage is a really good local band called Running on Credit. When I hear local talent like this I wonder why they aren't famous rather than the mostly crappy bands that are on the radio.
