      The molcajetes were so cool! I walked back around later and the lady was working on something else in a bigger size. She had no fear, which told me I need to work in the stuff I make with mine much better!

          Glad you all enjoyed the photos! Michael_in_TX I think I smiled for an hour after getting to talk to him. Seeing the schedule prior to going, i didn’t think I’d get to see him since he was on at 5pm but loved that he was doing a cooking demo! HIs salsa is great too!

          SheilaAnn YES!!!!!! You totally have to make the work trip! Bring a trailer so you can stock up on green chile everything! Ristras would sell like hot cakes in your market, as would the green chile of course! And if you do…..we gotta drink the Spirit Animal Vodka and Gin!!!!!!!

          it would be fun to see people here for this festival! Heck never thought of a meet up here for this. El Paso, TX is the closest for flying in but Albuquerque provides great opportunities for food. This could be a fun place for that!

          barelfly Did you catch Kent Rollins' latest video? Stacked New Mexico Enchiladas. Much simpler red sauce than what I make. I have 8 lbs of reds on the way - gonna try this:

            Make that 18 lbs. Since I want to make at least a gallon of naturally fermented red Hatch hot sauce I decided to order another 10 lbs.

            No I haven’t seen this pop up in YT! Thank you for sharing!! Will be watching now!

            And yes, red sauce, it is as simple as water and dried red chile, or fresh. Dried is available year round here. But that’s how I make my carne adovada.

            Alright - just watched it! Great video - man, when I talked to Kent at the festival, he was the exact same guy! Such a fun guy to watch.

            As for the chile. That red chile is just what I do but with the dried red chiles and you have your base to go from. Just a simple red chile sauce!

            And looking forward to seeing your fermented sauce! That is gonna be dynamite.

          Not sure if I’m going to the Hatch Chile Festival this year, we are planning on it.
