i’ve been smoking pork all weekend on my WSM with the usual zeal of a new convert. Yesterday I wore my fitness tracker (Apple watch) while I loaded charcoal, ran to the store to get more charcoal on sale, raised a popup shelter against the afternoon rain, and worked on stuff around the yard while waiting for ribs to cook.
Doubled my move goal!

Today: half a pork butt sliced into Tasso on the upper rack. The bone-in portion is on the lower rack for pulled pork IF all goes well.
smokin fool I believe it is various forms of exercise people engage in in order to "get fit". Personally, I meet any urge to exercise with a seat until it passes. Unless 12 ounce curls are considered an exercise, then I whole heartedly embrace it! Sitting down, of course
Tasso came off at 3.5 hours. It was a thinner cut than usual. Pork came off at 9.5 hours on just a little more than one chimney of coals! Impressive WSM performance! Temp ranged from 225 to 260.
