I decided to upgrade my WSM today so I could do high temp runs for things like Turkey. I love using my WSM and find that for things like brisket and pulled pork, I get better results than my pellet smoker. I just have never been able to get much over 270. upgrades: I picked up a 3 vent repair kit and added 2 to the top and 1 to the bottom. I put gaskets around the entire lid section and the door. I added a thermometer and a probe port for my digital temp gauge. I built a rolling kart completely out of torn down pallets and an old 2x4. The stainless top I got for free at work. to test it I filled 1 large Weber chimney, put half on the charcoal grate in a donut and lit the other half. After about 15 minutes I was up to 390. I should be able to dial this in perfectly for chicken / turkey and because of the gaskets I should have even better temp control on the low end. Couldnt be happier. I just need to do a good cleaning on the outside once she cools down.
