I'm toying with the idea of turning my Brinkman into a dedicate pizza oven. I'm done using it as a smoker. I did some experimenting without pizza specific mods. If I go through with the mod instead of tossing this smoker I'll make a cutout on the lid to slide the pizza in, and add stones and or heat reflectors top and bottom.
BTW I'm new here... is there a way to cross post onto two forums? I'm posting this on the smoker forum, but maybe it should be on the pizza forum or both?
I don't know about cross posting sorry just wanted to say Welcome! Looks like your on to something with a dedicated pizza cooker!!! So I say if you got the room (and the better half doesn't mind lol) Go for it!

I think you may have a great plan! Throw a heat sink in the lid and even a cast iron pie plate for the pizza to sit on and I think that you have a winner!
It would have to outperform the Weber that sits next to the Brinkman to make it worth it. I have a technique that makes very good pizzas on the Weber. Takes about 20 minutes. I use lump below the grate, and on the grate level with and behind the pizza stone, and also put some wood on the grate for wood fired taste. I use the thermometer as a stop to open the lid just enough to access the pizza hands free. This keeps a lot of the heat in when accessing the pizza. The pizza pictured below was created on a 22" Weber using the aforementioned technique. Notice it came out better than the pizza on the smoker as it is more evenly cooked top and bottom.
That smoker lives at my cabin. At my house I just picked up a Blackstone pizza oven. I won't be back to cabin until Christmas. If and when I go forward with the mods I'll be back to post pics.

The steel cone happens to be a Vortex, but you can sub 3 fire bricks arranged as a triangle to support any pizza pan you choose. I love my Lodge CI 14"

Nice technique with the fire bricks. Although I seem to be able to get results without them. However if I go through with the Brinkman mod I'm going to keep this in mind. I would like the surface of my stone to be level with the lip of the smoker. I might also want to use brick to stop the pizza from being shoved off the stone with the peel.
