I am going to try something I heard someone talking about...a pork tenderloin inside a hollowed out pineapple, all of which is wrapped in bacon. What would your best guess be on cook time? I'm going to do two of them and want to give myself enough time.
Swineapple as I understand it. The problem is getting the bacon crispy, just put a probe through the "bottom" into the tenderloin and know that you may have to go direct for the bacon. My guess is 3 hours
I made one, but used smoked sausage instead so temp wasn't as big of a concern.
