    Making Beef Barbacoa Tacos - so which meat?

    I've done this with a beef chuck roast with high success. The local market has top sirloin roast at the same price as a chuck roast. Any reason not to use the top sirloin roast?

    I really like the chuck better because of the additional intramuscular fat on the chuck roasts and the top sirloin roasts that I can get. Good Luck!

      I think the chuck roast might have more inter muscular fat that would break down and give a great gravy to it. Not sure if the top sirloin would pull apart like the chuck. Someone else might have a different idea though.

        (I haven't done this one yet, but it is on my list. In the podcast about this episode, he describes them as possibly better than brisket.)

          Beef cheeks are the way to and they are at most walmarts. Sirloin would me but it doesn't work out so what make chilli it
