    My new PBCand some Food

    Got my new PBC as an early Christmas Present. This thing is really cool, I was dead set on making my next purchase an offset but I am sure am glad I pulled the triggers on one of these. I got it with the Choice package so pretty well set on anything I could need starting out from an accessories stand point!

    Not to mention Customer Service with these guys is phenomenal, extremely quick response time and very informative.

    Got her set up on the deck, went and grabbed some cheap pavers just for peace of mind.

    Used the lighting instructions and set the basket, and remarkably minimal leakage from the lid! For the first cook I wasn't going to waste any expensive cuts so I did 2lbs of Bacon, Rack of Ribs and a Chuck Roast. Meats were prepped the night before so once I got the smoker rolling it was just about go time, set the hooks and got ready to hang.........BOOM my Thermometer is completely dead.....Crap!

    Well it was to late to stop now so I let the smoker roll for about 45 mins and got a "close" reading with my instant and hung everything up and let it ride. I have no data to support how the PBC held temp but I never got any nasty smoke or anything from a visual standpoint to raise an alarm and nothing got scorched.

    Since I was pretty much riding blind I did what I could with what I had, all in all the end product wasn't bad for shooting in the dark.

    The Bacon has been one of my favorite things since I started playing around with smoking meats and the chuck came out tender with a nice crust. I would post a picture of the ribs but the heathens ate them before I got back inside to take a picture.

    Only downside about this first cook is the fact that I need to spend $200 on a Fireboard But should be smooth sailing after that! Cheers!

    Now that is one gorgeous set of photos, Voodoo628 . Congrats on the delicious first cook. I'd eat that bacon right this minute.

    You won't regret getting the Fireboard--I recommend the Extreme BBQ Edition package. It's pricey but you'll use every bit of it over and over again.

    I'm guessing that your new baby will get fired up again within a day or two for another cook. I remember when I first got my PBC, I could hardly wait for another PBC cook day to dawn. I'm putting that down to love at first sight.

      I was looking at the extreme edition just to have the flexibility if I need it.

    Looks like a great first cook! I suspect that once you get the lighting down, and have a dozen cooks or so on it, you will find that the PBC will maintain temps averaging around 275....they seem to like that range. You can crank it up some by cracking the lid and using various kinds of charcoal, but fiddling with vents is pretty much unnecessary, and since you don't have any anyway that is as good thing! Seriously, you can adjust it somewhat, but it seems to work better for many of us when we set it up and let it do its thing! Enjoy, its a great cooker.

      Fireboard is ordered. Hopefully here by the weekend! Sure hope so to much stuff stacking up in the fridge and freezer.

        Congratulations on the new PBC. Your food looks really amazing. Envy the nice shiny look as I was outside cleaning up my Yoder and thinking about how pristine it was when new.
